Oh Boy….

It’s Monday again! Wow, this weekend went by really fast. My sister-in-law came to stay with us Saturday night, which is always fun since Monkey LOVES her. And then I had a wonderful Mother’s Day. I got to sleep in (hurray!) and didn’t have to do dishes or anything. Awesome!

What’s not-so-Awesome is how I did with my Menu Plan last week. I really need a kick in the pants, I swear. This week, however, we have no extra money for eating out, so hopefully that will help me stick to my menu.

Monday: Swedish Meatballs, Egg Noodles, Green Salad (bumped)

Tuesday: Fabulous Wet Burritos, Mexican Rice (Yes, this is the third week it’s been on my menu. I hope it’s good!)

Wednesday: Maple Roasted Chicken Breasts, Baked Sweet Potatoes, Steamed Green Beans (bumped)

Thursday: Chicken, Mushrooms, & Parmesan with Orzo, Green Salad (Another new one)

Friday: French Dip Sandwiches with Sauteed Onions, Baked Chips, Fruit Salad (I saw an amazing version of this on The Pioneer Woman, but I just can’t bring myself to make it. It’s so fattening! But since I’m in a family way, now I’m craving it. So I’m making this one instead.)

SaturdayCheesy Ham & Pasta Bake, Steamed Mixed Veggies, Rolls

Maybe I should bribe myself…If I get through the whole week without ordering take-out, I’ll buy some more Lindt truffles the next time I’m grocery shopping. Yum. :)

I’m at a loss…Plus Other Random Things

I’ve been at my wit’s end the last few days. Monkey has been acting up, and THAT is an understatement. A little whining and complaining is nothing new in this house, but this exceeds even the worst days. She’s even taken to just flat out saying “No” when we tell her to do something. I have absolutely no idea how to handle this. Time out doesn’t really work with her. Taking things away doesn’t work with her. I’m at a loss here. Any ideas?

On a COMPLETELY unrelated note, I was finally able to try the Curried Coconut Chicken last night, and it was FABULOUS. I really couldn’t taste the coconut in it, but I’m not a big fan of coconut, so it was OK. :) This was wonderful on a bed of rice with some steamed veggies. YUM.

Money-wise, not doing so well this week. I was able to go to the mall BY MYSELF yesterday, which was awesome, but it was also a very bad idea. :) I have to say though, it was nice to just get out of the house and go to Target and the mall and not have anybody complaining about not wanting to go into this-or-that store *ahem Computer Guy.* I was also able to get my maternity pants exchanged, which is definitely a good thing, since pre-pregnancy pants just aren’t fitting these days. I also ended up spending more than I had anticipated, which means we’ll be scrimping the rest of the week. *Sigh* :)

Well, oops!

I haven’t been doing very well updating my blog, have I? I wish I could say I just haven’t had the time, but I really didn’t do much of anything last week, so I have no idea. :) It must’ve just been one of those weeks, because I didn’t do very well with my menu plan, either! So there are a lot of repeats this week, just because I didn’t get around to making them last week. So, on that note, here’s my menu:

Sunday: We went out to eat, which is bad! Very bad!

Monday: Sausage & Tomato Rigatoni, Green Salad, Bread (We have this just about every week. I did actually make this one!)

Tuesday: Curried Coconut Chicken, Rice, Mixed Veggies (Carry-over from last week)

Wednesday: Swedish Meatballs, Egg Noodles, Green Salad (New recipe)

Thursday: Left-Over Night (This helps A LOT with our budget.)

Friday: Fabulous Wet Burritos, Mexican Rice (Carry-over from last week)

Saturday: Maple-Roasted Chicken Breasts, Baked Sweet Potatoes, Green Beans (New recipe)

I Love it When Things Work Out…

I’ve been trying my hand at making our favorite recipes a little more healthy, since Computer Guy is on a diet, with little success so far. So I was a little nervous about changing up one of the family’s most beloved recipes.

On Monday, I made Computer Guy’s favorite Sausage & Tomato Rigatoni, but substituted Italian turkey sausage. I was a little nervous, because the texture is SO different. Computer Guy said it was just as good, and could hardly tell the difference, so….Goodbye, extra calories and fat! I think that, once the bottle of dressing that I need for this runs out, I’m going to try making my own. I already have the recipe picked out (it’s here), so we’ll see how that goes.

On a side note, Monkey has started referring to Baby #2 as “her baby.” Apparently, at 4 (well, she’ll be 5 when Baby gets here), she is old enough to take absolute responsibility in all things baby related. I won’t have to change a single diaper, feed a single bottle, or deal with a screaming baby a single night. *sigh* If only it were that easy. :)

So, on that note, here’s the ultrasound pic of Baby at 11 weeks. I’m almost 13 now, so Baby has obviously grown some.

Look at those feet! And his/her nose is killing me. Ugh.

Menu Plan Monday

I’ve been lurking over at I’m an Organizing Junkie for a while now, and I’ve always wanted to participate in MPM. Now I finally get a chance to!

So here’s my menu plan for this week. Our weeks start on Sunday, so we’ve already had one of our meals (and it was GOOD, too!). I’ll post links to my recipes whenever I can, since I’m always trying new ones.

Sunday:   Corned Beef and Cabbage (My mom used to make this all the time, and I was always like “Ugh.” But for some strange reason *wink* I’ve been craving it, so I went ahead and made it. YUMMY.)

Monday:   Sausage and Tomato Rigatoni, Green Salad, Italian Bread (Computer Guy’s personal favorite. This uses bottled salad dressing, so it’s not as frugal as I would like it to be, but I’ve been making it since before the frugal days. Maybe one of these days I’ll try a homemade dressing instead.)

Tuesday:   Creamed Ground Beef on Toast, Green Beans

Wednesday:   We’ll eat whatever left-overs are in the fridge. I’ve been doing this once a week for a while and it has REALLY helped on cutting down on food waste.

Thursday:   Fabulous Wet Burritos, Mexican Rice (New Recipes)

Friday:   Curried Coconut Chicken, Rice, some sort of veggie (Also a New Recipe)

Saturday:   Computer Guy’s Famous Burgers, World’s Best Potato Salad, Corn on the Cob
